Message would be able to speak to this much better than I'm about to, but I'll give it a shot here.

Under high-G situations, the oil pickup will no longer be submersed in oil. As revs increase under acceleration, the pickup is no longer primed, and oil pressure can drop dangerously low as the pickup is starved. Because of this cavitation, a situation develops where the pickup is no longer supplying sufficient oil to keep pressure up to an optimal level.

This vulnerability can be mitigated by an oil pan with a modified geometry that in turn keeps the oil pickup submersed full-time. This is accomplished with baffling, windage trays, and other things I have a limited understanding of.

Additionally, a larger oil pan allows for better cooling of the engine/turbos especially when combined with an oil cooler. Larger volumes of oil also mean the oil lasts longer as it is cycled through the system less and endures less wear and tear.

Dr. Kuah has posted this information in the past along with some great charts showing his oil pressure read-outs from his road-coursing experience. I'm sure either he, or someone equally qualified will jump in and shore up any glaring inconsistencies here - but this should cover the basic idea.
